

SPRING WATER
We decided to brew our beer at Arta Terme [in the province of Udine] because of the water. We use the water that comes out of a spring in Monte Cabia – a mountain which stands above our brewery – and is piped down to the town and our brewery. Water composition indicators are all excellent, including a water hardness index which is not too low and therefore advantageous, especially for brewing dark beers.
